Broccoli Soup AKA Van Soup

A memory I will always have with this soup. I was asked to bring soup to a church luncheon in Sun City. My time was short in the morning, getting kids to 3 different schools then rushing back home to quickly make it and get myself presentable.  Worked it all out, started driving to the church. As you may know, Sun City has a lot of senior drivers. (Word to the Wise! Always be alert in this town. They pop out of nowhere or don't remember to stop at stop signs!!) I'm about half way there and...whatta ya know?? I had to stop fast and had the crockpot sitting carefully on the van floor on a towel. Should have used a seatbelt. That's right...all over the van floor. Cheese and Broccoli. Not the easiest thing to clean. ("No soup for you!" Seinfeld)

2 (10 oz) pkgs cut Broccoli Frozen in Cheese Sauce
2/3C   Onion chopped
1/2C   Butter
6 Tblsp Flour
5C  Milk
1/2tsp Salt
1/4tsp Pepper
2Tblsp Liquid Chicken Bouillon
1C Shredded Cheddar Cheese

Cook cheesy broccolli in microwave to heat through with cut slit in plastic, then put in blender until finely chopped. Cook onion in butter until tender. Stir in flour until smooth. Add milk gradually, continually stirring until thickend & smooth. Add salt, pepper& chicken bouillon, then add the cheesy broccoli and 1 Cup of Cheddar Cheese. Simmer until heated through, stirring occasionally. Makes aprox. 8 Cups. Sprinkle cheese on top. Great for those cold winter dinners. You could serve with buttered sour dough  bread, or place in mini sour dough bowl.

White Chicken Chili

This is a recipe from my good friend Mary Jane. She's my blogger idol. Check her out at Beehive Cottage. This is so good that I prefer it over my Steak Chili.

4  Boneless, White Chicken Breasts
1  Medium Yellow Onion (optional if you don't like onions...Heather!)
3  tsp Garlic Powder
2  Tblsp Vegetable Oil
4  Cans - 15 oz White Chile Beans, rinsed & Drained
2  Cans - 14oz Chicken Broth
3  Cans - 4oz Chopped Green Chilies
2  tsp Salt
2  tsp Dried Oregano
2  tsp Ground Cumin
2  tsp pepper
1/2 tsp cayenne pepper (or more for a bigger kick, but be careful!)
2C (16oz) Sour Cream
1C(1/2 pint) Whipping Cream
Fritos to top it off! or not!

In deep pot:
Oil, cooked chicken cubed, chopped onion & garlic powder. Cook until onion is soft. Add beans, broth, chilies & seasonings. Bring to a boil. Reduce heat & simmer uncovered for 30 min. stirring occasionally. Remove from heat & stir in sour cream & whipping cream. Let stand for aprox. 10 min. for sauce to thicken. Serve immediately. Sprinkle cheese atop with a dab of sour cream and a sprig of fresh cilantro for a Blue Ribbon Presentation.

"Wheel of Doom"

This breakfast treat started out with the name "Wagon Wheel". I duplicated it, from a special bakery in Orange County. As time passed forward to Daniel's teen years, his style became grey and black, and renamed this sweet treat "The Wheel of Doom", but again later it was renamed by the same author, "Wheel of Death", which has stuck ever since and remains a bit of tragedy and comedy. Don't let the name fool you! It's so good, it's scary! LOL

2 frozen loaves of Bridgeford Bread Dough (thawed)Put in overnight in fridge from freezer
1 7oz bar of cream cheese (softened)
1 7oz jar of creamed marshmallow
1 can Cherry Pie Filling

Place thawed dough on well floured pizza stone, streach it out to the edge and poke holes in it. Place in oven at 275 to let rise. Once it's tripled in size, turn up the heat and bake at 375. At this time mix cheese and marshmallow together til fluffy.Take crust out oven when golden,and poke nooks and crannies into crust. Spread marshmallow cream mixture over hot top to edge. Place in oven again until marshmallow looks lightly golden. Spread Cherry Pie Filling over hot cream mixture. Drizzle a mixture of Powdered Sugar(about half cup), and milk (about a Tblsp.and vanilla to taste), over top in a zig-zag formation!!
CAUTION: 1 bite and you may not be able to stop! Thus... Death! LOL

Quiche for Breakfast Please!

Mix in Bowl:
14       Eggs                                       1 can    7oz. diced Green Chiles
1/2 C Butter                                    1/2 C    Flour
2 C     Cottage Cheese                     1tsp      Baking Powder
1lb.     Jack Cheese 1 can                1/2tsp  Salt

Want more flavor? Add crumbled bacon or sausage. Wisk it up! Bake in greased 9x13 dish at 350 for 35-45 min. until knife comes out clean.

Chicken Enchiladas or Flautas

Enchiladas
Mix in bowl:
1 can of Cream of Mushroom Soup
1can of Cream of Chicken Soup
1 7oz can of chopped green chiles
3 boiled chicken breasts

Fills about 12med. tortillas (4 heaping Tblsp.)
Place in 9x13 dish
Cover with grated cheddar cheese
Bake 350 for 20-30 minutes until heated through and cheese is melted

For Flautas  Roll with 2 heaping Tblsp.Fry in well oiled pan on one side and flip over when golden, fry until both sides are golden. Makes about 24 Flautas. Best served hot!
Serve Topped with guacamole.

Guacamole
Mix in blender:
2 ripe avacados
1 cup sour cream
1 Tblsp lemon juice or fake stuff ok
Add Mild Pace Picante Sauce for spice
Whip it up mmmmmm...
Note: Cream soups make a great creamy sauce for anything!! Add spices!
